The town of Mikulov is dominated by a chateau that rises on a rock, around which the urban development is spread. To the east above it towers Holy Hill, and from the north the Turold hill, which is an outlier of the Pálava Hills. The western side opens into a plain; on the southern side, not far from the town, there is the low Gallows Hill and beneath it the Šibeník pond. The town became famous for its rich winemaking tradition. The cultivation of grapevines was brought to the Mikulov region by the Romans. The local protected vineyard sites on the southern foot of Pálava still belong to the warmest places in South Moravia. Their limestone soils are especially well suited to Welschriesling, whose vines occupy the largest area of the vineyards. Other white varieties grown here include Grüner Veltliner, Pinot Blanc, Chardonnay, and others.
